La Petite Maison's Cocktail – The Method

We present a simplified version of a cocktail found on the seasonal menu. It's a batch premix that is packed with flavours of a Christmas time, making it excellent for hosting a holiday party. Reserve the remaining syrup for breakfast cocktails, puddings, or to mix more rounds of bikinis.

Bikini Recipe

Serves 10 people

For the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Put all the items into a saucepan, bring to a simmer, mixing so the sugar melts. After that, turn off the stove and leave to cool fully. Decant to a clean bottle, cap it and store in the fridge, it can be stored for about a month.

For the Cocktail Base: Combine the specified liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then strain preferably using a fine cloth, so it's completely strained.

To serve: Add 85ml of the premix into your mixing glass filled with ice, gently stirring carefully for about 60 seconds to chill. Strain into a cold coupe glass or similar, top with some cranberries and finish with a brief mist of mandarin oil above the glass.
